When I'm catering a large party, I often buy the parmesan that's already shaved into slices to save myself a lot of time and to make sure the presentation is on point!
1. Using a food processor - combine peas, garlic, lemon, olive oil and pesto - add salt & pepper to taste
TIP: I recommend you 'pulse' the mixture until it's combine, so you still get a bit of texture. If you let it go on full tilt you will have more of a pea-butter, rather then a crowd-pleasing topping :)
2. Get a non-stick pan or grill pan to medium high heat. Add your olive oil. Slice your ciabatta loaf into individual rounds, and toast on either side until crispy and golden brown. Remove from pan onto a paper towel to remove an excess oil.
3. Place about a tablespoon of pea pesto, on each warm ciabatta crostini - top with parmesan cheese flakes & onion sprouts and serve!
